Food Waste Friday – 3.25.11

Food Waste Friday keeps me responsible & accountable for my family’s food & finances…thanks to The Frugal Girl!

This week’s waste was some leftover chicken & mashed potatoes.  We had it for dinner because we needed to eat it out of the freezer; normally we take leftovers for lunch but this lonesome pyrex dish never made it out of the fridge.  Wednesday dinners tend to be low-sodium & flavorless to prepare for Thursday weigh-ins, and boy, did this taste low-sodium & flavorless.  I have absolutely no remorse that this one was wasted (well, the dog enjoyed it).  At least we ate the other 2 portions that were in the freezer!

Mediterranean Chicken & Mashed Potatoes

For a success story, this week I have a “food waste pay-it-forward.”  Humor me for a minute.  🙂

Last week I turned old bread into breadcrumbs, and then into meatballs.  Well, I actually made a lot of meatballs and froze some for future use, as I often do to make weeknight meals easier.  I also had a half-jar of pasta sauce in the fridge that I needed to use up. 

So, as my husband suggests every time we have meatballs for dinner, I made meatball subs.  Turns out the guy had a fantastic suggestion.  I think I might do that again sometime!
