Food Waste Friday keeps me responsible & accountable for my family’s food & finances…thanks to The Frugal Girl!
Oh, dear. This week’s casualties: a liquefied cucumber, a head of lettuce, an avocado my son asked for in the grocery store (which I never fed him, obviously), and a half container of ravioli.
I actually did have a couple of fantastic produce-saving success stories. I had leftover cilantro which I used up by making chili verde.
I never use up an entire bunch of cilantro – it always goes bad so quickly – so I was particularly proud of this accomplishment.
I also had a partial red onion, carrots, and celery which I used in a roasted chicken for a pre-prepared crockpot meal for a super-easy weeknight dinner!
I’m hoping the upcoming week will be much, much better…
