Food Waste Friday keeps me responsible & accountable for my family’s food & finances…thanks to The Frugal Girl!
No waste again this week! Hooray!
This week was successful primarily due to some rather creative leftover-repurposing.
I used up some chicken, feta, and veggies in an easy quiche (look for the recipe in a late-October Surviving Dinner post).
I also had a random collection of leftover grilled and baked chicken in the freezer that I was struggling to figure out how to use. My favorite sous chef ended up combining it with leftover black beans and stale tortilla chips to make one of our all-time favorite recipes – tortilla soup. What makes it even better is that since I already had tomatoes, jalapeno, zucchini, and chicken broth around the house all I had to buy was an onion and avocado. Dinner for $1.47? Yes, please!
