I think we did pretty good this week…neither me nor Rusty can remember throwing anything away.
But really, I wanted to take the opportunity to point you in the direction of this recipe over on my favorite recipe site, Skinnytaste.com. I saved some tomatoes by sauteing them and adding them to this recipe, I used up some fresh mozzarella before it went bad, and I’ve been trying to find creative ways to use up all of last year’s zucchini in my freezer before this year’s crop starts rolling in.
The crustless zucchini pie not only tastes delicious and is healthy for you, but I envision it as a fabulous way to use up all sorts of leftovers in the future!
Not bad for potential food waste, huh?
