Food Waste Friday keeps me responsible & accountable for my family’s food & finances…thanks to The Frugal Girl!
Last weekend we went camping. On Saturday evening I began to come down with what I can only figure was my first-ever migraine headache and was out of commission pretty much through Monday. So that meant when we got home from camping on Sunday afternoon not only was I pretty much useless and unable to do the usual post-camping cleaning/laundry frenzy, but I also didn’t do the regular weekend cleaning, laundry, menu planning, grocery shopping, food prep, and overall organizing to prepare for the upcoming week. Let’s just say it wasn’t my best week – I always felt like I was running behind and didn’t quite have a handle on things.
The purpose of that lengthy narrative was to explain why I have no food waste pics this week. It’s probably for the better; it was a bad week. Instead, a list:
- 1/2 pkg lunch meat
- a couple of pounds of cherries that we didn’t get around to eating
- a whole watermelon I should have cut up 2 weeks ago
- 1/4 red onion in the fridge
- a jalapeno
- a bunch of cilantro
- This technically isn’t waste, but we discovered some of our beefsteak tomatoes have blossom rot so when we went to pick those beautiful red tomatoes we had to send them straight to the yard waste container. Very, very disappointing.
Speaking of gardens, I’m sure I’m not the only one who is gearing up for the zucchini to start coming in fast & furious. Last week I pointed you toward a new zucchini recipe, and this week may I present to you the tot:
Now, I don’t know exactly what comprises an official “tot” as the only other kind I’ve had any experience with is the “tater” variety, but may I just say that these were delicious and another not-so-common way of using up that zucchini!
